Whether you’re making a fancy spread or a quick meal, Parmesan roasted carrots are the perfect easy and tasty side dish.
Just a few months ago I had two preschoolers. Now, I have two elementary school students and an infant. If I thought life was busy before, I had no idea the craziness the world of dance classes and homework and parent meetings would bring. I know life will only get busier as the kids get older, which is why it’s so important to me to establish routines while they’re young.
One of those non-negotiable routines is family dinner time. It’s important to me that we begin this tradition now; I want it to be a habit so that, when the kids are older and even more active, it’ll already be something we’re used to doing.
Some nights this is more easily accomplished than others. Some nights, it seems I have to choose between cooking an elaborate dinner or sitting down to eat with the family. The choice is easy: I opt for family time and grab a frozen entree to eat, like LEAN CUISINE® MARKETPLACE Cheese & Fire-Roasted Chile Tamale, LEAN CUISINE® MARKETPLACE Chicken Tikka Masala, or LEAN CUISINE® MARKETPLACE Southwest-Style Potato Bake.
I love these meals because they’re genuinely so good. Not good-for-a-frozen-meal good, but good. Lean Cuisine Marketplace Cheese & Fire-Roasted Chile Tamale is my favorite, but the meals are unique enough to suit any mood. They’re all protein-packed, made with organic ingredient options, and full of flavor, which is why I usually toss a few in the cart nearly every time I’m at Walmart. To round out the meal and add a homemade component (because I just can’t resist), I like to pair my Lean Cuisine Marketplace meals with a simply-prepared vegetable, like these Parmesan roasted carrots.
They’re pretty simple to prepare and they roast in the oven in the time it takes to prepare the rest of your meal and whatever the family is eating. The carrots are bathed in garlic butter, roasted until tender, sprinkled with Parmesan cheese, and then roasted a little more. They’re the perfect complement to any of the Lean Cuisine Marketplace meals.
Parmesan Roasted Carrots
Ingredients
10 whole carrots
3 tbs. butter
2 cloves garlic
1/3 c Parmesan cheese
1 tbs chives
Instructions
Preheat the oven to 400 degrees. Mince the garlic and add it to a small bowl, along with the butter. Melt the butter in the microwave. Peel the carrots and place them on a parchment-lined baking sheet. Drizzle the butter and garlic over the carrots, making sure carrots are coated. Place the carrots in the oven for 15 minutes, shaking the pan twice during roasting. Remove the pan from the oven, sprinkle the Parmesan cheese over the carrots, and roast for 10 to 12 minutes more. Sprinkle finished carrots with chopped chives and serve warm.

These look like a great side for any Lean Cuisine meal! Thank you!
Thanks, Lori!
This is such a great way to make an easy, balanced dinner. It’s been tough to figure out how to cook dinner with a newborn. Some days he sleeps and I can pull it off, but other days are tough and I need something simple like this.
I’m right there with you, Jenna. Some days I feel like Super Mom (though, to be honest, my bar isn’t too high) and other days I walk around in a spit up stained shirt because it doesn’t seem worth the effort to change. 🙂
These actually look Delicious and I don’t normally like carrots! I need to try this!
Thank you! I’m pretty picky about my carrots. I don’t often like them cooked because they can get mushy, but these keep the perfect amount of crunch for me.
I love roasted carrots, but have never went savory with them, so I have got to try this recipe!
If you love carrots, Joanna, I think you’re bound to love this. The natural sweetness of the carrots and the tang of the Parmesan…yum!
Parmesan cheese is my favorite- these look both healthy and delicious!
Go ahead and add a little extra Parmesan when you make these… I won’t tell. 😉
Ah, those carrots look amazing!! I need to go get some Parmesan!
