Meet your family’s new favorite easy weeknight meal: this sausage and tortellini isn’t just mouthwatering, it’s also a super easy one-pot meal.
Does your family have a meal that’s always available as a backup? A recipe that you make sure to keep all the ingredients on hand for? If you’re a fan of easy weeknight meals, you’ll want to add this one to your arsenal.
If you open our refrigerator and don’t find a package of tortellini and a hunk of sausage, it’s probably because I made this meal in the last few days. There are several reasons why we eat this sausage and tortellini a couple times a month, with the main reason being that it’s just so good.
Beyond the fact that we love the hearty sausage and the rich tortellini, I also like that this meal is quick. It comes together quickly, in about 20 minutes. It’s made all in one pot and the pasta isn’t boiled separately, it’s just tossed in with the other ingredients and simmered there.
A supper that’s quick to prepare, only requires one pot, and brings together smoky sausage, garlic, and cheese-filled tortellini? I’m not sure what else you could ask for.
Sausage and Tortellini
adapted from what’s cooking in the ‘burbs
Ingredients
1 14 oz. package smoked sausage
2-2 1/2 cups tortellini pasta (I use the smaller size package of Buitoni Three Cheese)
2 cloves of garlic, minced
1 1/2 cups chicken broth
1 1/2 cups pasta sauce
pinch of red pepper flakes (optional)
2 tsp Italian seasoning
shredded or freshly grated Parmesan cheese
Instructions
Begin by slicing sausage into 1/2 inch half moons. Cook the sausage in a skillet coated with nonstick spray for about 5-7 minutes over medium heat, or until sausage is browning.
Add garlic and cook for two more minutes. Next, add the chicken broth, pasta sauce, red pepper flakes, and Italian seasoning. When mixture begins to simmer, add the pasta and cook uncovered for about 10 minutes more- I usually taste a piece of pasta to test if itβs done. Serve topped with Parmesan cheese.

Yummmm…. this looks so good! I will have to make this for my fiance sometime… he loves sausage and tortellini and is quite the picky eater at times, so this recipe sounds perfect for him!

Yum!!!! I would love to try this and add some veggies (something easy like frozen peas/carrots) to the mix. We always have pasta, beans, broth, and chicken in our house so I can always make some kind of pasta dish or soup π

Veggies added would be so good! I think I’ll add peppers and onions next time I make it (I’ll just have to separate my portion from my picky husband’s first). Pasta is definitely my go-to last-minute meal!

Sausage is something I don’t remember to cook with often enough. It’s so good with pasta!
Before this recipe, I didn’t often cook with it, either. Now I make sure we always have some in the fridge because it’s perfect with tortellini!
