My local FFA club sold flats of strawberries a few months ago. I bought one and decided to bake my way through the whole thing. The result was a whole lot sweet strawberry goodness, including these Strawberry Balsamic Donuts with Balsamic Glaze.


The flavor combination of strawberries and balsamic vinegar is one of my favorites. I love to sprinkle sliced strawberries with brown sugar and balsamic and eat them that way. I just knew I could turn those flavors into a delicious baked donut. I was worried the donuts would be too taste-specific, but I was wrong. I shared the leftovers with my high school English students and they loved them!

Strawberry Balsamic Baked Donuts

Ingredients

For the Donuts

1/4 cup butter, melted
1/4 cup vegetable oil
1/2 cup white sugar
1/2 cup brown sugar
1/4 cup balsamic vinegar
2 eggs
1 tbs vanilla extract
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 2/3 cups flour
3/4 milk

For the Glaze

1 1/2 cups powdered sugar
2 tbs balsamic vinegar
1 tsp vanilla extract
2 tbs milk

Instructions

Preheat oven to 425 degrees. In a large bowl, mix together melted butter, white sugar, brown sugar, and balsamic vinegar. Beat in the eggs, one at a time, and then the vanilla extract. Add the baking powder, baking soda, and salt. Add a third of the flour, mix until combined, and then add a third of the milk. Alternate until all of the flour and all of the milk have been added.

Spoon the batter into a donut pan and bake for 6-8 minutes, or until a toothpick inserted into a donut comes out clean. Remove donuts from the oven and transfer to a cooling rack.

While donuts are cooling slightly, prepare the glaze by whisking together all four ingredients. Add additional powdered sugar or milk to achieve desired consistency. Dip donuts in glaze and place back on cooling rack until glaze is set.

    Wow! This looks amazing. I don’t know that I’ve ever tried strawberries with balsamic but now I’m curious!

      Do it! One of my favorite treats is sliced strawberries tossed with a little brown sugar and balsamic vinegar. Yum!
