Chocolate Chip Pumpkin Scones with Maple Glaze

This recipe originated from my desire to make something that combines my three current favorite flavors. Chocolate is always something I’m in the mood for, and right now I’m just as smitten for all things pumpkin as everyone else seems to be. It’s like we all feel this desperate need to cram 12 months of pumpkin eating into the three months that it’s actually socially acceptable.

And then there’s the maple glaze. I grew up in a small town with the best local donut shop. My all-time favorite donut flavor is maple-frosted. It’s a flavor you can’t find on other baked goods, which is kind of okay with me; it belongs on donuts.

Since moving away and leaving those fabulous donuts behind, I’ve been on the lookout for a local version that might come close. I’ve yet to find it, partially because I’ve never even found another maple-frosted donut. I don’t know why donut shops in the south don’t carry that flavor, but they don’t, which means I don’t get a maple fixed.

Unless I make these scones. Don’t get me wrong, the pumpkin and chocolate in the scone itself is rich and moist, but still dense like a scone should be. They’re great on their own, but the maple glaze makes the pastry. It’s a sweet but deep flavor that complements the pumpkin and chocolate. These scones were a hit with my family, even the ones who don’t feel as strongly about maple as I do.

Cinnamon Roll Bars with Cream Cheese Frosting

October 19, 2015 by Abby

Pillsbury Traditional Yellow Cake Mix gets a boost with cinnamon and brown sugar. They're baked until chewy, and then spread with a thick layer of icing for cinnamon roll bars with cream cheese frosting.

Who doesn’t love cinnamon rolls? I know I do, and I even make them on occasion. I’m not afraid to work with yeast and there’s just something about a warm homemade cinnamon roll that defies description.

But this is real life. Sometimes it’s 10 p.m. and you remember, as you’re about to climb into bed, that you promised a group of students you’d feed them at your 7:30 a.m. meeting. And since cinnamon rolls are certainly not happening, you rack your brain for a simpler solution. Something mouth-watering, yes, but something that comes together quickly.

That’s where these cinnamon roll bars come in. The base is Traditional Yellow Cake Mix, so it doesn’t take too many more ingredients for the bars to come together. As soon as you open the bag of cake mix, you’re hit with its rich vanilla-y smell. By the time you add the cinnamon, brown sugar, and other ingredients, your whole kitchen smells like a decadent cinnamon roll.

As I put the bars in the oven, J walked in the kitchen and said, “That smells so good; what did you make?” He was surprised I hadn’t baked anything yet because the kitchen smelled that good. And by the time I pulled the cinnamon roll bars out of the oven, the whole house smelled like cinnamon and sugar.

Sure, you could make this recipe from scratch, but the Pillsbury Traditional Yellow Cake Mix does all the work for you. It delivers deep flavors while doing most of the hard work for you. You get the convenience of a boxed mix with the ability to transform it into something entirely your own.

bacon, egg, and cheese potato waffles

Bacon, egg, and cheese potato waffles are all your favorite breakfast flavor notes, packed into crunchy waffles that are perfect for any meal of the day.

When I bought the hashbrowns to make this hashbrown crust breakfast pizza, I also bought another bag and tossed it in the freezer. They were on clearance, so I figured I’d find a use for the second one later.

I tossed around a few ideas in my head, but nothing really seemed to pique my interest. And then one day here was this recipe, right in my Pinterest feed, like a gift. I knew, with a few adjustments, these bacon, egg, and cheese potato waffles would be worthy of those extra hashbrowns.

As I was making them, J, who shares my love of all things brinner, came into the kitchen to investigate. Our exchange went something like this:

“Do these have potatoes?”
“Yup.”
“And eggs?”
“Yup.”
“And bacon and cheese?”
“Yup.”
“Wow. That’s all my favorite things.”

If those are your favorite things, too, this recipe needs a place of honor at your table sometime soon. [Read more…]

healthy whole wheat blueberry banana muffins

Healthy whole wheat blueberry banana muffins are lightly sweetened and packed with moist bananas, sweet applesauce, and juicy blueberries.

Let’s be honest. A real blueberry muffin, the kind with white flour and tons of sugar, is nothing more than an unfrosted cupcake. Sure, we like to pretend that muffins are somehow healthier than cake or cookies, but in most cases, they aren’t.

Except for these. Healthy whole wheat blueberry banana muffins are sweetened mostly with bananas that, along with applesauce, keep the muffins moist in the absence of loads of oil or butter. Regular flour is nixed in favor of a heartier white whole wheat version, and each muffin is dotted with juicy blueberries for a pop of freshness.

These muffins are the best kind of healthy; the kind that doesn’t taste like you’re sacrificing anything.

better for you triple chocolate banana bread

June 8, 2015 by Abby

Better for you triple chocolate banana bread has no butter, oil, or added sugar- except for the chocolate, of course- while still delivering big on flavor. With sweet, moist bananas and three kinds of chocolate, this bread tastes decadently indulgent.

Several years ago, when we were still living in Oregon, I had a favorite better for you banana bread recipe. When we came back from the beach a couple weeks ago with several overripe bananas, I went in search of that recipe, only to discover that the website had been removed.

Removed.

The author of my absolute favorite all-time best ever better for your banana bread deleted her blog without consulting me. The nerve.

Not to be deterred, I decided I was up to the challenge of re-creating the recipe. After all, I’ve made my share of quick breads– a lot of quick breads– and I remembered the basics of the original recipe.

It took two tries to get things just right, but I had no shortage of willing recipe testers. My sources tell me that this one is a keeper.

3 delicious breakfast recipes under 300 calories | winstead wandering

It’s three months into the new year. Maybe your weight loss resolutions aren’t going as well as planned. Or maybe they are, but you’re growing tired of the same boring, low-calorie options. Here are three winstead wandering-approved recipes to break you out of your breakfast rut without busting your resolutions.

egg sandwich from a cup of jo

This recipe is touted as “the best egg sandwich you’ll ever have. While I have to disagree (the breakfast sandwiches J. and I make, my mom’s recipe, are hands-down the best ever) this is likely the best for under 300 calories. The recipe is actually written by Deb of Smitten Kitchen, so you know right off that it’s a winner.

The recipe basically has you beat an egg and and pour it into a pan. You cook the egg a little, like a crepe, pile cheese in the middle, and wrap the egg up around the cheese. When you put the egg-wrapped cheese on a toasted English muffin, you have a delicious treasure chest of hot egg and gooey cheese, all wrapped up in a 270 calorie* package.

sausage, egg, and cheese crescent roll bake

January 19, 2015 by Abby

sausage, egg, and cheese crescent roll bake: a quick breakfast, lunch or dinner | winstead wandering

We’re no strangers to brinner- breakfast + dinner- around my house. In fact, we probably have it at least twice a week. I love it because most breakfast options are fast and frugal, which are two huge factors I use in determining what we’ll be eating each week.

The other thing I love about the meals in my brinner rotation is that they can all be easily customized. One meat can be subbed for another, vegetables can be switched out based on what you have around, and using a specific kind of cheese isn’t that important.

All of the above apply to this sausage, egg, and cheese crescent roll bake. You could easily use bacon or ham instead of sausage and add any kind of veggies you like (to the whole dish or just to a portion). I use a cheddar cheese blend, because that’s what I usually have on hand, but most anything would work.

1/2 teaspoon Oregano
1/4 teaspoon salt

cinnamon roll bars: an easy, delicious take on a time-consuming classic | winstead wandering

Who doesn’t love cinnamon rolls? I know I do, and I even make them on occasion. I’m not afraid to work with yeast and there’s just something about a warm homemade cinnamon roll that defies description.

That’s where these cinnamon roll bars come in. The base is a box cake mix, so it doesn’t take too many more ingredients for them to come together. I love to bake the bars the night before, then whip up the frosting in the morning and frost them right before I walk out the door.

These bars are so easy, yet so moist and rich, that they could easily become a new make-ahead holiday favorite. Or, if you really love the people in your life, make them this weekend.
