Baked Spaghetti and Meatballs

October 17, 2016 by Abby

An easy, crowd-pleasing meal for any night of the week, baked spaghetti and meatballs is cooked all in one dish for big flavors and little cleanup.

An easy, crowd-pleasing meal for any night of the week, baked spaghetti and meatballs is cooked all in one dish for big flavors and little cleanup.

At this point, it might seem like all we eat is pasta dishes, Mexican food, and breakfast-for-dinner. That really isn’t too far off the mark if I’m being honest.

But we like what we like and, even though I do occasionally mix things up, I’m currently liking meals that are easy prep and easy cleanup. That’s exactly why, when I came across a spaghetti and meatballs recipe that was baked, didn’t require precooking of the pasta, and could be cooked all in one dish, I knew I had to make it.

This baked spaghetti and meatballs recipe sat on my to-make list for way too long, mainly because I had to wait to get my hands on lean ground beef. My tiny local grocery store doesn’t carry it, but I knew using any other kind would leave this dish greasy and unappealing. When I finally did buy lean ground beef, I wasted no time in whipping this up.

It was definitely a hit. I prepare meatless meals a few days a week, so anything with meat is an immediate favorite for J. It doesn’t hurt that these meatballs were tender, not dry (sorry, moist), and full of flavor. The pasta was perfectly cooked and coated in sauce. The whole thing was topped off with melted cheese- the kind that’s just starting to turn golden. Mmm.

The recipe was so fast to put together. Like, the whole thing was ready to be baked in the time it took the oven to preheat. The bake time itself is slightly longer than most of my easy weeknight meals, but I don’t mind that when the time is mostly hands-off. In fact, the baking time would be the perfect window to whip up a tasty vegetable side dish or a few slices of garlic bread.

The recipe makes enough to feed three to four people, depending on appetites and side dishes.

Sausage and Tortellini

January 20, 2016 by Abby

Meet your family’s new favorite easy weeknight meal: this sausage and tortellini isn’t just mouthwatering, it’s also a super easy one-pot meal.

Meet your family's new favorite easy weeknight meal: this sausage and tortellini isn't just mouthwatering, it's also a super easy one-pot meal.

Does your family have a meal that’s always available as a backup? A recipe that you make sure to keep all the ingredients on hand for? If you’re a fan of easy weeknight meals, you’ll want to add this one to your arsenal.

If you open our refrigerator and don’t find a package of tortellini and a hunk of sausage, it’s probably because I made this meal in the last few days. There are several reasons why we eat this sausage and tortellini a couple times a month, with the main reason being that it’s just so good.

Beyond the fact that we love the hearty sausage and the rich tortellini, I also like that this meal is quick. It comes together quickly, in about 20 minutes. It’s made all in one pot and the pasta isn’t boiled separately, it’s just tossed in with the other ingredients and simmered there.

A supper that’s quick to prepare, only requires one pot, and brings together smoky sausage, garlic, and cheese-filled tortellini? I’m not sure what else you could ask for.

Hey! The month of July has me crisscrossing the country, from a road trip to Chicago to a plane ride “home” to Oregon. While I’m away, I’ve lined up some awesome guest posts for y’all.  Today, Ruth is here to share a unique one-pot meal.

Hi I’m Ruth from Pea Fritters! I’m a mum who’s a foodie (or a foodie who’s a mum, not sure). I started Pea Fritters to share some inspiration around feeding your family, building healthy food relationships from the early days (I’m a huge fan of Baby Led Weaning) and trying to convert people to the awesomeness that is meal planning. I’m super excited to be guest posting on Winstead Wandering! You can follow me on Facebook, Instagram, and Pinterest.
Can I hear a heck yes for a one dish meal!? I love cooking, but I hate doing the dishes, so anything that I can cook all at once in one pan is an absolute winner in my book. This Middle Eastern Quinoa Tray Bake is one of those winners. It’s also gluten free and dairy free and super easy to bring together. Perfect for a mid-week family meal or if you’re entertaining- absolutely one to add to your weekly meal plan.

Hey! The month of July has me crisscrossing the country, from a road trip to Chicago to a plane ride “home” to Oregon. While I’m away, I’ve lined up some awesome guest posts for y’all.  Today, Leah is sharing her family’s easy peach cobbler recipe.

Hello Winstead Wandering Followers!

First let me say a big hearty thanks to Winstead Wandering for letting us be a guest on her blog. We love what Abby does here and her recipes are amazing (thanks, Leah! You’re too sweet!).  We have added several to our list of family favorites. We are honored to be a part of such a special place….now let’s cook.

I love the farmers market.  There are just so many things to love about buying directly from a farmer that makes his living growing vegetables for our table. I love the smells, the free tastes and the proximity of buying fresh food for dinner that night.  Plus how can you not enjoy meeting and getting to know local growers that bring you yummy goodness ever single week.  I love my local grocer and I am thankful for the convenience of it, but buying from the Farmers Market is just so wonderful.
