No ice cream maker necessary! You already have all the tools you need to make this sweet and creamy no-churn strawberry ice cream.

It’s the time of year I spend months looking forward to: strawberry season. I’ve enjoyed preparing them in a lot of different ways, but I hadn’t made ice cream until recently. I knew it was possible to make ice cream without an ice cream maker, but I assumed the process was difficult and required multiple steps. In actuality, making homemade ice cream without an ice cream maker couldn’t be easier.

The key is to finely dice your berries and let them hang out with the sugar and vodka. The berries will start to break down and create that sweet syrup that will flavor the ice cream. After they get cozy for about an hour, all you have to do is mash or blend them until they’re mostly liquid, mix them with the citrus juice and heavy cream, and let the whole thing freeze.

The result is a sweet and creamy ice cream that’s overflowing with the flavor of ripe summer strawberries. It’s a delicious treat on its own, but it’s also divine served with chocolate syrup.

Some of my best recipes come to be through a desire to use up expiring ingredients. In this case, I bought a pound of strawberries and promptly forgot about them in the fridge. When I remembered them a few days later, they were just past the eat-them-raw stage. They hadn’t quite moved into completely inedible, though, so I knew I could bake them into something to avoid throwing them away.

I had pinned this scone recipe a few weeks earlier and knew it was just the vehicle for these almost-spoiled berries. Scones have a reputation for being the dry, unappealing cousin of biscuits or coffee cake, but I’m here to tell you that’s not true.

My only experience with scones has been the ones my mom makes, and those are moist, light, and full of flavor. The key to producing a fluffy scone- and not a triangle-shaped hockey puck- is to not over mix your dough. Once you add your wet ingredients to your dry, stir everything just until it’s combined.

These glazed strawberry lime scones are packed with pockets of fresh berries and swirled with lime juice. Before going in the oven, they’re sprinkled with coarse sugar for a sweet crunch. Next, they’re baked until golden and light and then drizzled with a tart sugar lime glaze.

Sonic was a pretty big deal when I was in college. Happy hour always fell right as most of my friends and I were arriving back in our dorm after classes and work, and the half-price drinks beckoned to us.

I’ve tried my share of smoothies and slushes, but the strawberry limeade will always be my first love. Fruity, refreshing, with just the right amount of zesty zing.

A simple strawberry sauce and store bought soda are all you need to make a copycat sonic strawberry limeade.

I consider it fate that, just the other week at the grocery store, as I was buying strawberries to make my favorite strawberry sauce, I found a bottle of store brand limeade on an end-cap.

The rest is history.

The days are longer, the temperature is warmer, and the local Piggly Wiggly has some beautiful produce.

Because it’s Spring, y’all.

What better way to welcome the season than with a batch- or four- of this sweet homemade strawberry sauce?

My favorite way to enjoy this sauce is in a glass of cold lemonade. The strawberry and lemonade combo? Red Robin has nothing on me.

In addition to the lemonade, strawberry sauce adds a sweet freshness to cheesecake, ice cream, or waffles or pancakes.

Or you can just enjoy it right off the spoon.

brown sugar balsamic strawberries: a healthy, unique treat | winstead wandering

Strawberries. Balsamic vinegar. Sugar. These are a few of my favorite things. They’re also three things I never would have imagined combining into one dish, let along enjoying. But a few years ago, I stumbled across a recipe- if you could even call it that; it basically just listed the three ingredients- on a blog I don’t recall. I was intrigued, and I happened to have everything I needed, so I threw it together.

The berries get tossed in the rich brown sugar and the acidic balsamic vinegar. Everyone rests in the fridge for a few minutes, getting chilled and cozy. When you pull it out to eat, the sugar and vinegar have come together to form a sweet and tangy sauce. The vinegar has begun to break down the berries, making them soft and delicate. It’s all a pretty lovely process.

It’s important to note that I’ve never followed a recipe when making this dish. I measured the last time I made it so that I’d be able to provide a recipe here, but keep in mind that there’s not really a wrong way to combine these three ingredients, so feel free to play around with it.
