With just the right amount of good-for-you sweetness, Double Chocolate No-Bake Cookie Protein Bites are the perfect healthy treat for breakfast or for on-the-go snacking.
My kids had a lemonade stand a few days ago. It was all their idea (I have no idea where they see or hear about half the things they come up with), so I made a batch of homemade lemonade, set up a table and two chairs in the carport, and helped them sound out “l-e-m-o-n-a-d-e” for construction paper signs.
They had it in their heads we needed to offer snacks, too, and since I’d been meaning to make a batch of Double Chocolate No-Bake Cookie Protein Bites to photograph for the blog, I obliged. I stirred the protein bites ingredients together, mixed up the lemonade (with their assistance, of course), and then shaped the bites into balls.
The only problem? We live in the country. Like, we have one neighbor and that’s my husband’s parents. So I texted grandma and she drove over, and then our sweet mail-lady came by a few hours later. They were so excited! I see another lemonade stand or two in our future.

These guys are perfect for keeping in the freezer for school lunches, quick snacks, and easy breakfasts. They’re simple to make, too, so you can easily double or triple the batch.
Double Chocolate No-Bake Cookie Protein Bites
Ingredients
2 cups old-fashioned oats
2 scoops chocolate protein powder
2 tbs ground flaxseed
1 tbs chia seeds
1 tbs unsweetened cocoa powder
dash of salt
1/2 cup peanut butter
1/2 cup honey
1 tsp vanilla extract
1/2 cup mini chocolate chips
Instructions
Combine oats, protein powder, ground flaxseed, chia seeds, cocoa powder, and salt in a large bowl and mix well. Next, add the peanut butter, honey, and vanilla extract and stir until everything is well-incorporated. Mix in the chocolate chips.
Place the bowl in the fridge for 30 minutes and then shape the mixture into ping pong ball-size bites. If the dough seems to crumbly to form balls, just stir in an extra tablespoon or two of peanut butter. Store in the refrigerator for up to a week or in the freezer for three months.
