Most weeks I incorporate taking recipe photos into everyday life. After all, nearly every recipe I make is meant to be enjoyed by my family. It isn’t uncommon for me to make dinner and then take photos before serving the food.

Lately, though, life has been a little crazier, and making time for photos has been tough, especially with the sun setting so early. So a few Saturdays ago I had a marathon recipe session. I made Jalapeño Popper Twice-Baked Potatoes, Lighter Instant Pot Macaroni and Cheese, Crispy Baked Potato Wedges and, of course, these adorable little Lemon Meringue Pie Bites.

I knew I’d be making these as soon as I realized I had leftover lemon curd from making Baked Lemon Hand Pies, as well as leftover egg whites from making the Homemade Lemon Curd. There wasn’t quite enough curd left to make a full pie, plus these meringue nests are just too darn cute to resist.

I’m not prepared to admit how many of these guys I ate. It was a few, okay? They’re so light and airy! I got too excited and filled all the meringues, meaning they needed to be eaten that day. Looking back, I should have left some of them empty, stored them in the fridge, and then filled them to be eaten on Sunday.

Oh, well. Looks like I’ll just have to make them again!

Breakfast Calzones

With store bought dough and a few classic breakfast staples, you can whip up a batch of easy, satisfying, portable breakfast calzones.

Another breakfast recipe means another recipe that we don’t actually eat for breakfast. Like so many recipes before this one, we enjoy these breakfast calzones for supper. We’re just suckers for bacon and eggs; top it with cheese and wrap it in dough and we’re powerless to resist.

Like so many of the recipes I share, this one can be completely customized depending on what your family likes and what you have on hand. Swap sausage for the bacon, load it up with veggies, or add a few spoonfuls of salsa. Whatever you decide to include on the inside gets all wrapped up inside the handy dough pocket, making these breakfast calzones ideal for breakfast- or lunch or dinner- on the go.

I imagine these little pockets would be fairly freezer-friendly, but I’ve yet to give that a shot (though I can vouch for the freezability of these homemade pizza pockets). Let me know if you give it a try with this recipe!

With a unique and crunchy potato crust, this sausage quiche is easy enough for a weeknight meal and fancy enough to impress just about anyone.

For the longest time, I assumed quiches were way too fancy for my taste and for my cooking abilities. One day I realized they’re mostly just a really big omelette, minus the complicated flipping part. They’ve been a staple at our table ever since.

Like a lot of the “breakfast” recipes I share, we usually enjoy this sausage quiche for supper. It’s super easy to make, especially when I use shredded hash browns and sausage from the freezer (I typically cook a pound of sausage at a time and freeze the half I don’t use). The cook time is longer than most dinner recipes I make, but the hands-on time is minimal.

With a unique and crunchy potato crust, this sausage quiche is easy enough for a weeknight meal and fancy enough to impress just about anyone.

One of my favorite things about this recipe is that it’s totally customizable to the tastes of the people you’re feeding. My husband doesn’t care for most vegetables, so it’s easy for me to include veggies only on my half. Of course, you could leave out the veggies entirely, or skip the sausage and double up on the vegetables.

Breakfast isn't just for morning anymore. These bacon, egg, and cheese breakfast sandwiches are easy and filling enough to be enjoyed for any meal of the day.

Bacon, egg, and cheese breakfast sandwiches will always remind me of my childhood. My mom has made hundreds of these in the last twenty years for me, my siblings, and an endless array of friends. She can crank them out at an unbelievable speed.

J and I hadn’t been dating long when, as an admirer of all things breakfast, he fell in love with these breakfast sandwiches. They’ve been a stable meal in our home ever since we got married.

Of course we love the obvious: crisp bacon, perfectly-cooked eggs, and melted cheese, all sandwiched between the buttered nooks and crannies of a toasted English muffin. We also love that these guys can be prepared in about 15 minutes. We use whole wheat English muffins and, when we want to be even healthier, we’ll skip the bacon.

We rarely eat them for breakfast; for us, they’re the perfect easy, filling weeknight meal. I love them served with sliced fruit and fresh home fries. They’d be perfect with store-bought hashbrowns, too.

When I bought the hashbrowns to make this hashbrown crust breakfast pizza, I also bought another bag and tossed it in the freezer. They were on clearance, so I figured I’d find a use for the second one later.

I tossed around a few ideas in my head, but nothing really seemed to pique my interest. And then one day here was this recipe, right in my Pinterest feed, like a gift. I knew, with a few adjustments, these bacon, egg, and cheese potato waffles would be worthy of those extra hashbrowns.

As I was making them, J, who shares my love of all things brinner, came into the kitchen to investigate. Our exchange went something like this:

“Do these have potatoes?”
“Yup.”
“And eggs?”
“Yup.”
“And bacon and cheese?”
“Yup.”
“Wow. That’s all my favorite things.”

We’re no strangers to brinner- breakfast + dinner- around my house. In fact, we probably have it at least twice a week. I love it because most breakfast options are fast and frugal, which are two huge factors I use in determining what we’ll be eating each week.

The other thing I love about the meals in my brinner rotation is that they can all be easily customized. One meat can be subbed for another, vegetables can be switched out based on what you have around, and using a specific kind of cheese isn’t that important.

All of the above apply to this sausage, egg, and cheese crescent roll bake. You could easily use bacon or ham instead of sausage and add any kind of veggies you like (to the whole dish or just to a portion). I use a cheddar cheese blend, because that’s what I usually have on hand, but most anything would work.

adapted from Six Sisters’ Stuff

1 small can of crescent rolls (you only need four rolls; you can always buy the regular size and find another use for the leftover four)
1/2 pound ground sausage, cooked and drained
3/4 cup shredded cheese
4 eggs
2 tablespoons of milk
1/2 teaspoon Oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon minced onion
