I took my oldest child and my only son, G, grocery shopping with me the other day. He doesn’t usually care to go, but this time he was eager. He was so helpful during the whole trip. G insisted on carrying the list, reading me the items, and checking them off when we put them in the cart.

I kept marveling at home sweet he was being and how much I was enjoying our time together. Until . . . We passed by the clothing section, and I stopped to admire a really cute top. I asked if he thought it was cute and, without hesitation, he replied, “I think it’s halfway to being cute.”

At least he’s tactful? I got a good laugh from his comment, and then we continued on to get the rest of the items on our list. Those items included everything necessary to make these Low Carb Sausage-Stuffed Mini Sweet Peppers. Y’all, these things are so good. I originally saw the recipe shared in a low carb Facebook group I’ve in, and I knew right away I had to make them, with my own spin, of course.

Low Carb Sausage-Stuffed Mini Sweet Peppers are the perfect example of a recipe that doesn’t feel like a “diet” recipe. How could it when it’s packed with cream cheese, pepperjack cheese, and sausage? These little bites are wonderful as an appetizer or a snack, and I think they’d be great as a side for dinner, too.

I spend approximately 73 percent of my time dreaming of new ways to cook with peppers. In addition to my poblano obsession, I’m a big fan of jalapenos and cubanelles. I bought a couple cubanelles at the grocery store a while back without any real plans for using them. They sat in the fridge for a few days, I brainstormed ideas, and then I had a light bulb moment.

Why had I never made fried pepper rings before? I’m talking onion rings, but with peppers. Genius, right? I’d had fried jalapeno slices, but I’d never seen it done with milder peppers. Once the idea came to me, I couldn’t get it out of my head. I had no choice to but to make them.

I chose to use mild peppers, but I still wanted a little kick of heat. I whipped up a spicy dipping sauce and, I’ve got to say, please don’t make this recipe without the sauce. Fried Pepper Rings were made for so much more than boring ketchup; let them swim in the spicy sauce they deserve.

I’m not gonna lie; my Homemade Green Enchilada Sauce is pretty stinking awesome. The Green Chile Chicken Enchiladas I make with the sauce are pretty great, too, but that doesn’t always mean I want to make enchiladas twice to make use of all the sauce. Instead, I like to mix things up by making this hearty-but-not-too-heavy One-Pot Creamy Green Chile Chicken Enchilada Pasta.

Did I mention it’s a one-pot meal? Yup. Y’all, that means even the pasta is cooked right in the skillet where you cooked the chicken. In just about a half hour you’ve got a crowd-pleasing meal and only one dirty pot.

I’ve never been a fan of enchiladas made with red sauce. I do like them better when I use homemade sauce, but I much prefer enchiladas made with a lighter, green sauce. Plus, I’ll basically eat anything with roasted peppers, so there’s that.

Roasting fresh peppers gives them a depth of flavor that you just can’t find in a canned sauce. By combining the peppers with garlic and onions, you get a result that, in addition to being the perfect Homemade Green Enchilada Sauce, can be used as a salsa or a marinade.

My love affair with poblano peppers continues. It began with Roasted and Poblano and Onion Quesadillas, and then it heightened with Pasta in Roasted Poblano Cheddar Cream Sauce. Now things are really ramping up with this Cheesy Chicken Poblano Dip. Let’s be real here: you just cannot go wrong with a good dip recipe, especially as college football season heats up. But when that dip comes packed with three kinds of cheese, hearty shredded chicken, and the mild flavor of roasted poblanos? Then it becomes irresistible.

The dip is baked, which results in a dish of creamy, melty goodness. Once the dip is warmed through, you fire up the broiler to get the cheese on top especially gooey and golden. It’s awesome served warm immediately after baking, but you can also refrigerate it, either before or after baking. I first shared this Hashbrown Crust Breakfast Pizza on my friend Kayla’s blog. She’s since refocused to share about all things Disney, so she gave me the go-ahead to share this recipe here.

It’s no secret that I love breakfast foods (see here or here), and I also love pizza (here and here). Combining the two was a natural step, and the results were everything I’d hoped they would be. In fact, this breakfast pizza is so outstanding, it even made it to a Buzzfeed post.

With a crispy crust, tender veggies, fluffy scrambled eggs, and plenty of melted cheese, this Hashbrown Crust Breakfast Pizza is perfect any time of day.

So what’s all the hype about? To start, you toss pre-made hashbrowns with melted butter and bake to form a crispy crust. The crust is topped with tender veggies and fluffy scrambled eggs (plus any other toppings you can dream up), sprinkled with plenty of shredded cheese, and baked until the whole thing is one delightful dish of crispy, melty, whole family-pleasing goodness.

My local grocery stores don’t always have a large variety of peppers to choose from so, when I saw the crate of poblanos the other day, I grabbed a few without giving any thought to what I’d make with them.

I immediately roasted most of the peppers because I knew I’d want them that way for pretty much anything I would make. I ate some in a potatoes-and-eggs breakfast bowl and added a little more to a sandwich.

And then I made Roasted Poblano and Onion Quesadillas. The idea wasn’t original, since I make fajita quesadillas all the time. I decided to keep these a little simpler, though, to let the veggies shine. Now I’ve made them three times in the last week. Okay, fine. Four times.

I just.can’t.resist. Poblanos aren’t spicy; sometimes they carry a little heat, but mostly they’re just full of flavor. In addition, onions are probably one of my favorite vegetables. Add in a little cheese, plus the crispiness of the corn tortilla, and I could eat these things all day long.

As much as I love cooking now, I didn’t do much of it when I was growing up. It wasn’t until I moved away to college that I began to appreciate the quality of cooking I grew up with, both from mom and from my stepmom. There’s nothing like bland cafeteria food to open your eyes to how good you had things.

I spent much of that first summer break trying new recipes, and this Greek Panzanella was one of them. It was  so easy to throw together, even with my amateur cook status. Now, years later, it’s still a favorite. The recipe is the perfect fun alternative to the typical veggies and dip found at so many showers and parties.

Pasta salad is one of my favorite summertime dishes. I love me some carbs, but I also love making those carbs guilt-free by tossing them with plenty of fresh vegetables and a light vinaigrette dressing. I love to have a batch of pasta salad in the fridge to eat on each day, but I also love to bring it to cookouts and get-togethers.

It’s a fairly crowd-pleasing recipe, and it can be made using any produce you want. I grabbed the veggies pictured when I bought the rest of the ingredients at Walmart; you can buy whatever sounds good to you.

I love sweet tea about as much as I love pasta salad. As a Southerner, I’m practically legally required to love the stuff, but I assure you it isn’t that hard of a task. What’s not to love? That’s why I considered it pretty ingenious to combine the two to create a pasta salad with sweet tea vinaigrette.

When I’m looking for or brainstorming easy dinner recipes to make for my family, there are few different things that will make me stop and take notice. First and foremost, I’m always on the lookout for easy weeknight meals. I don’t want complicated ingredients or dozens of steps. Sure, there are times I enjoy more involved recipes, but weeknights aren’t one of those times.

If a recipe can be made using one pot only, I’ll definitely give it a second look. I hate making a twenty minute meal and then spending just as long on clean-up. If the process can be streamlined by using the fewest pots and utensils, I’m much more likely to consider trying it.

Lastly, I love when leftovers lend themselves to a recipe redo. For example, I almost use leftover chicken and salsa from easy weeknight chicken tacos to make nachos or quesadillas. The ingredients may be similar, but the flavors and textures are different enough to feel like a new meal. What I especially love about this recipe is how a hearty dinner becomes an easy, filling breakfast.

As you might can imagine, this sausage and potato skillet recipe checked off all the above boxes for me. It’s ready in less than 30 minutes, and it requires only one pot. You could easily speed up the prep process by using two skillets and cooking the sausage and potatoes at the same time, but I prefer to use the cooking time of one ingredient to prep the next.

The round two sausage and potato skillet recipe is super simple. Just add salsa, a little shredded cheese, and a fried egg to a serving of the original recipe and you’re good to go! This would obviously make a quick and filling breakfast, but it’d also me a crowd-pleasing way to serve these leftovers for supper. Basically, when you take a recipe that was delicious to begin with, add the trifecta of cheese, salsa, and an oozing egg, you can’t go wrong.
